The step of acid washing after alkaline washing is the standard washing method for the dairy industry. An acid solution is used to remove hard residues such as milk stone, which is calcium phosphate. These hard residues are not removed in the alkaline washing step.
In many factories of dairy, diluted nitric acid is used to remove milk stone, and has disadvantages, such as:
1- Very strong smell and vapors due to the dissolution of nitric acid
2- High level of corrosion on the surface of metals
3- It has no antiseptic effect
4- Burning and severe skin damage
Mineral acids that are also used in the food industry which used in the Epimax RMS solution. In addition, in Epimax RMS, peracetic acid is used, which is an effective disinfecting agent effects on wide range of Gram-positive, Gram-negative bacteria and fungi, which is considered the advantage for this product, that has simultaneous cleaning and disinfection power. Generally, Epimax RMS has the following advantages compared to nitric acid:
1-Simultaneous cleaning and disinfection power
2- High power to remove mineral residues of milk compared to nitric acid

The most reliable method to determine the density and time of consumption of concentrated disinfectants will be obtained by tests of the microbial contamination of the surfaces by the relevant experts of that unit.
